History
In our areas, Bergen, Essex & Union Counties,
The best and only Italian Cooks were the Italian Immigrantes, mothers &
grandmothers, who came to this country from all parts of Italy.
There were no Italian Restaurants and only some
stores in certain
parts of the area.
The
best Italian food was cooked and eaten either in the kitchens or in the cool
of a cellar in Summer.
Family dinner was very important
and attendance was mandatory, usually on Sunday,
after Church.
We were fortunate to be invited to many of
these gatherings and the tastes & smells were absolutely wonderful !

now as a part
of our living
history as well as those folks who were kind enough to share their recipes
