How a ‘Wine Tasting’ takes Shape 

First .. A bottle of each wine is ordered, as a sample, from the from the distributor. Carol then samples each wine from a separate glass, taking care to cleanse her mouth after each taste, and ‘crib notes’ are taken for each sample as to; mouth feel, heavy/light, berry type, acidity, softness and whatever other taste might be present no matter how subtle. Bottles are then ‘corked’ and Reds put in a dark cool place overnight .. Whites are refrigerated.

The same process is repeated the next day as changes evolve within the human condition from one day to the next.

Now a food or two is added to the ‘notes’ that would work well with that wine and a recipe begins to develop. Adjustments are made as to recipe contents while constantly sipping the wine as a ‘benchmark’. After about five days menu with wines is set !

William Jacob first surveyed the Barossa Valley in South East Australia prior to 1840. The creek was named Jacob’s Creek when William and his brothers built small cottages, that still stand, overlooking the creek.

In 1846 a German immigrant, Johann Gramp, purchased land near the creek and a year later he planted the Barossa Valley’s first vineyard on the banks of Jacob’s Creek and his Ironstone Winery still stands.
