Italian cookery reflects the fact that the country
became ‘unified’ only in 1861 !

Until then each region had it’s own cuisine using only ingredients that could be gathered, cultivated or grown locally and nowadays Italians still prefer to base their cooking on local ingredients because they regard quality and freshness as more important than diversity and innovation.

The early Romans adored food but were peasant farmers who ate only the simple rustic food they could produce: grain, cheeses and olives. For them,

Meat was an unheard-of luxury; animals were bred to work in the fields and were too precious to eat.

With the decline & fall of the Roman Empire there was a return to simple basic foods but with the Renaissance came great wealth because of trade

links with other parts of the World in salt and exotic spices and a renewed interest in more elaborate food and vegetables !


Italy – Jutting out into the Mediterranean Sea

An entire Country formed almost entirely from Volcanic action ! 

After millions of years it’s Volcanic soil is just perfect for Wine Grapes whose surface appears ‘dry & crumbly’ but contains an abundance of nutrients that only a volcano can produce from below the Earth’s surface.

Almost the entire Country is a series of steep hills & valleys with Wine grapes terraced in relatively small plantings on these well - ventilated hillsides from the Mediterranean and warmed by an intense daily sun!

Italy has more natural grape varieties than any other nation and has been producing wine for thousands of years at least since the Phoenicians & Greeks but most astounding of all because of it’s remote hillside plantings the grapes have been planted, cared for, culled & harvested all by hand with pride by each little village!


Why so many requests for Italian Food & Wine ?

It’s simply another country’s food that has become immensely popular because it’s basic, flavorful and very soothing !  

When Robert Mondavi’s family lived in Michigan his father was asked by all the Italian Clubs, in the area, to go to California and send grapes back so their families could make wine for only family consumption as doing this was part of Italian culture and always has been !

The Federal Government, not to be out done, enacted legislature that allowed any culture to make 2 barrels of wine / year for family use because they knew the Italians were going to do it anyway !

How a ‘Wine Tasting’ takes Shape 

First .. A bottle of each wine is ordered, as a sample, from the from the distributor. Carol then samples each wine from a separate glass, taking care to cleanse her mouth after each taste, and ‘crib notes’ are taken for each sample as to; mouth feel, heavy/light, berry type, acidity, softness and whatever other taste might be present no matter how subtle. Bottles are then ‘corked’ and Reds put in a dark cool place overnight .. Whites are refrigerated.

The same process is repeated the next day as changes evolve within the human condition from one day to the next.

Now a food or two is added to the ‘notes’ that would work well with that wine and a recipe begins to develop. Adjustments are made as to recipe contents while constantly sipping the wine as a ‘benchmark’. After about five days menu with wines is set !
