The Food Featured will be
"Tex-Mex" or "South West" USA. Tex-Mex was a nickname for the
Texas-Mexican Railway charted in 1875 and also to describe people of
Mexican descent who were born in Texas !
Food historians claim that
the first print evidence of Tex-Mex in reference to food
happened in 1945 and from
there Tex-Mex restaurants surfaced outside our Southwest
U.S. in cities with large
Hispanic populations. Tex-Mex then went "Gourmet" in 1970 !
Folks living in the East
tend to "cringe" when they hear Tex-Mex because if you live in Dallas,
Houston, San Antonio or
elsewhere in Texas and you love this cuisine .. that makes you a
'Chile Head' = "Spicy Food"
... Not so, for at least 50% of Tex-Mex dishes are extremely 'Mild'.
That will be the focus here
.. "Mild Tex-Mex" as there are some wonderful combinations of
this style of foods that
are a big part of these dishes where Beef is the primary meat used
and it stands to reason as
Texas is known for it's "Beef Cattle"
Pairing these foods with
the Northern Italian Cavit Winery seems a 'stretch' but they work
very, very well together as
we become more and more a Global Economy !!
